Purslane Salad With Pomegranate Dressing
- Half bunch of fresh purslane
- 1 small onion
- 2 small cucumbers
- 2 medium-sized tomatoes
For The Pomegranate Sauce:
- Half lemon juice
- 2 tbsp olive oil
- 1 tbsp pomegranate molasses
- 1 tsp sumac ( optional )
- 1/2 tsp or to taste salt
How To Make Purslane Salad With Pomegranate Molasses
- Chop fresh purslanes. I always keep most of the stem parts but chop the leaves part bigger and smaller when I come to the stems.
- Dice onions. To get rid of the bitterness, lightly wash and drain the water.
- Chop cucumbers and tomatoes and place them all over the chopped purslane.
The Pomegranate Molasses Dressing
- Add olive oil to a small bowl. Then add pomegranate molasses.
- Add some lemon juice, sumac, and salt and mix it well.
- Then pour the pomegranate dressing over the salad. Lightly stir the salad and its ready!
Purslane Salad With Yogurt Dressing
- Half bunch of fresh purslane
- About 3/4 cup thick yogurt
- 1-2 tbsp mayonnaise ( optional )
- 1/4 cup chopped walnuts
- Salt to taste
How To Make Purslane Salad With Yogurt Dressing
- First, chop fresh purslanes.
- Add thick yogurt over purslanes.
- Pour olive oil over the salad.
- Finally, add chopped walnuts on top.

- Chop cucumbers and tomatoes.
Preparing Pomegranate Dressing
- First add olive oil into small bowl. Then add pomegranate molasses.
- Add some lemon juice, sumac and salt. And mix it well.
Assembling Salad
- First add purslanes into serving plate. Then place onions, cucumbers and tomatoes.
- Then pour the pomegranate dressing over the salad.
