When it is the season, I love making these recipes to my family every year. Well if I somehow forgot, my daughter is there whit her request to make me remember 🙂 They are easy to make, in every bite you get the beautiful pumpkin aroma in different forms.

Spicy Creamy Pumpkin Soup:

This comforting soup is easy to make and perfect for chilly fall and winter days.

Ingredients:

  • 500g pumpkin (cut into pieces)
  • 1 onion
  • 2 carrots
  • 2 potatoes
  • 2 cloves garlic
  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • 2 tablespoons flour
  • 1 ½ teaspoons salt
  • 1 teaspoon turmeric
  • 1 teaspoon cumin
  • Black pepper to taste
  • 1 cup milk (or more to adjust the consistency)
  • 4 cups water or vegetable stock (chicken stock works too)

Instructions:

  1. First chop all the vegetables in small sizes. They don’t have to be in even size because we will blend everything later.
  2. Sauté onions in butter and olive oil for 2 minutes. Add garlic, carrots, potatoes, and pumpkin. Then sauté for another 2 minutes. Add flour and cook for 1 minute to thicken.
  3. Season with salt, turmeric, cumin, and black pepper and stir.

  4. Pour in water or stock and bring it to a boil. Simmer on medium-low heat until vegetables are soft (about 25-30 minutes). Blend the soup until smooth.

  5. Adjust consistency with milk and season with more salt or spices as needed. Serve hot and enjoy!

Pumpkin Bread

Soft, fluffy, and filled with the rich flavor of pumpkin, this bread is perfect for breakfast, to make a sanwich with or company to your dinner. You can also freeze and thaw at room temperature when you need it to keep its freshness longer.

Ingredients:

  • 500g pumpkin (pureed)
  • ¾ cup milk
  • 2½ tablespoons olive oil (or vegetable oil)
  • 1 egg
  • 1 teaspoons sugar
  • 1 teaspoons salt
  • 20g fresh yeast (or 1 tablespoon active dry yeast)
  • about 5-6 cups all-purpose flour (add gradually)
  • ½ cup warm water

  1. First boil half of the pumpkin that is cut into chunks and mash it into a puree. Then mix the pumpkin puree with milk, olive oil, egg, yeast, sugar, and salt in a large bowl.
  2. Gradually add flour. Let me note that sometimes you might want to skip but sifting always gives a better result in baking. Knead until you get a soft playable dough. Let the dough rise for about 1 hour until doubled in size.
  3. Deflate the dough, make a log and first cut into two pieces. Then every piece into three.

  4. Shape the pieces into thin logs and braid securing the ends. Sometimes I like to braid with 4 pieces too. Cover again either with baking pan or dampened clean kitchen towel and let it rise for another 30 minutes.
  5. When it is proofed, preheat the oven to 200°C (390°F) Sift flour lightly on top of the breads for a rustic finish and bake for about 30 minutes, until golden brown.

Turkish Pumpkin Dessert:

A sweet and melt-in-your-mouth pumpkin dessert soaked in syrup – a Turkish fall favorite: Kabak tatlısı (Turkish for “pumpkin dessert”) It is basically made by cooking peeled and cut pumpkin in sugar syrup. The dish is topped with chopped walnuts, drizzled tahini or kaymak. It is a winter-time seasonal dessert.

Ingredients:

  • 500g pumpkin (sliced into 2-3 cm thick slices)
  • 2 cups sugar
  • ½ cup water
  • 1 tablespoon lemon juice (optional)

Instructions:

  1. Cutting the pumpkin slices is an important step. We want an even thick sizes so they cook evenly. It is better to peel a bit thicker then normal because some pumpkins can be hard to cook at their green edges.
  2. Place the pumpkin slices in a wide pan. Pour the sugar over the pumpkin and cook on low heat until it starts to release its juice (about 20 minutes).

  3. After the sugar melts, increase the heat and cook until the syrup thickens, and the pumpkin becomes soft and caramelized (about 40 minutes).

  4. Allow the dessert to cool and soak up the syrup. Serve with a drizzle of thick syrup. Optionally, you can add tahini (sesame paste) for extra flavor.
