“Saç Tava” or Tawa is one of the traditional specialty dishes of Turkish cuisine. This Beef stir-fried with vegetables, known as a pre-wedding dish in some regions, and you can find it in most Turkish restaurants.
It is cubed meat, beef stir fry in special tawa pans, with onions, tomatoes, green peppers, and some spices. Usually, it is served with rice pilav, but I will show you a healthier version with bulgur wheat pilav.
About Siyez and Bulgur Wheat: Siyez bulgur or translated as Einkorn Wheat. It is one of the oldest cultivated grains discovered in early civilizations in Anatolia, more nutritious, as it has a different gluten structure than actual wheat grain. It is the pure original form of wheat and has never been hybridized or genetically modified.
Ingredients For “Saç Tava” Turkish style beef stir fry
- 500gr. beef in small cubes
- 4 tbsp vegetable oil
- 1 medium-size onion
- about 4 sweet thin green peppers or similar kinds you can find on the market
- 3 medium-size ripened tomatoes (grated or peeled and finely diced) or you can use canned tomato puré,
- about 1/2 cup about tsp salt, pul biber (red pepper flakes), oregano ground cumin optional
- about 1/4 cup or more hot water or meat stock
- For the Siyez & bulgur Wheat Pilaf
- 2 cups bulgur wheat (I used 1 cup of it ancient Siyez (Eincorn) wheat
- 5 tbsp olive oil
- 1 heaped tbsp butter
- 1 onion 3+1/2 cup or more hot water
- about 1+1/2 tsp or more salt
Instructions For Sac Tava:
Pre-cook the meat:
- Cut the beef in 2-3cm thick small cubes. Heat the pan and add meat. Cook on medium-high stirring from time to time until it changes color, releases its water.
- Lower the heat to low and cook until soft. If the water evaporates you can drizzle more hot water.
Stir Frying Beef With Vegetables In Sac Tava Pan:
- Heat traditional sac tava or big wok pan adding 4 tbsp vegetable oil and 1 heaped tbsp butter. Add cooked meat cubes, fry for about 3-4 minutes then add diced onion.
- Continue to cook on medium heat until onions cooked halfway about 3 minutes. Add sliced green pepper and stir.
- Add grated tomatoes or canned tomato puré and cook for another 4-5 minutes
- Season it with salt, pul biber (red pepper flakes) and, oregano. Add about 1/3 cup hot water or meat stock and simmer for 5 minutes or until everything is soft. Serve hot with rice or bulgur pilav.
Side Dish ideas:
You can make “Cacık” yogurt cucumber dip, or “Shepherds Salad” with it. This time I wanted to serve it with a seasonal salad simply with grated carrots and lettuce.
